Darren and Patti Bartholomew of Salisbury, Missouri, bring their home-raised and hand-
fed Black Angus beef to the Boone County Farmers Market. Long-time commercial cow-
calf producers and fourth generation Missouri cattlemen, Darren and Patti enjoy sharing
with other beefeaters their delicious grass-raised and grain-finished beef. The meat is
antibiotic free, and no additional hormones are implanted in the Bartholomews’ cattle or
butcher beef calves.
Darren has developed their year-round beef finishing program throughout his 30-plus
years of experience raising cattle. Yearling calves born and raised on pasture grass at
the Bartholomews’ cattle ranch are selected for butcher beefs based on genetics,
disposition and consumer demand. Using a staggered finishing schedule, Bartholomew
Beef calves are gradually worked up to a full finishing feed, receiving hand-fed daily
rations of a custom blend of corn and protein for a minimum of 150 days. Butcher beefs
are slaughtered under USDA inspection at a local butcher shop. The result is a locally-
produced, healthy and delicious protein source that is available at the Boone County

A full range of steaks, roasts and ground beef products are available from Bartholomew
Beef, including hard to find special cuts such as all-beef brats, tri-tip, flat iron, skirt, flank
and hangar steaks. Thanks to the staggered finishing schedule for butcher beefs,
special orders for prime ribs, whole K.C. Strips, whole tenderloins and whole briskets
can be filled on a timely basis. Quarters and half beefs are also available year round.
New to the Farmer’s Market this season is a whole range of shelf-stable products, made
only from Bartholomew Beef! Whole muscle jerky, pressed and formed jerky, summer
sausages and three flavors of snack sticks are now available! We also have specialty
items like ready to eat, fully-cooked smoked brisket and corned beef, and all-beef sweet
bologna.
Bartholomew Beef’s unique all-beef brats, hamburger patties, one pound packs of
ground beef, rump roasts and sirloin tip stew meat, along with a mixture of our shelf-
stable all-beef products, are also available year round at all three HyVee grocery stores
in Columbia. Hamburgers made from Bartholomew Beef and KC Strip Steaks are
served every day at the Broadway Diner in downtown Columbia.
